The cuisine at Blu is not the typical “spa restaurant” expectation; rather, it is an imaginative way of preparing popular dishes without fussiness. So, tender filet is served with flavorful truffle vinaigrette, instead of a heavy béarnaise. We call it “clean cuisine.”
